Yellow Tomato and White Bean Salad

Can you tell I am trying to squeeze every last drop out of summer with my posts for this week? They read like the menu to a picnic or BBQ. We bought these yellow tomatoes from the Locavore's tent at the farmer's market and so I made this very simple salad.

INGREDIENTS
- 8-10 yellow cherry tomatoes, quartered or halved
- 1 red tomatoes, diced
- 1 can white beans, drained and rinsed
- 1 tbsp olive oil
- 3 tbsp white wine vinegar
- 1/2 tsp Dijon Mustard
- salt and pepper
- 1 tsp parsley
- 1/2 tsp marjoram
- 1/4 tsp dill

METHOD
1. Mix together everything in a large bowl and season to taste.

You can use the same dressing for other salads, too; like this tomato-cucumber salad.

OOOOoohhh Yum! Thanks for sharing this fantastic salad and dressing. I've been eating tomatoes and cukes in every way imaginable and can't wait to try your dressing... anything with DIJON has got to be fabulous :D
