Happy 5th Birthday, Son #2

Just a short post tonight showcasing the vegan fare from Son #2's 5th birthday. He requested a Buzz Lightyear cake, and I obliged. Not my finest work, but not too bad. We also had vegan slyders, which were a hit with all the guests, vegan and otherwise.

Today is also my and Vegan Mom's 10th anniversary, which we no longer celebrate on the actual day because of birthday duties. I will post the food I make as soon as we find some time to have to ourselves . . . .

Dear Sir,

You have the best food blog on the Internet. I have been drooling over it (and occasionally on it, sorry) since I discovered it a few weeks ago.

Tonight your "comfort food" tag came in handy for inspiring a vegan Shepard's pie (mashed potatoes, sautéed zucchini, carrots and -never would have thought of this without your blog - garbanzo beans in a vegan "cream" sauce (roux + white rice cooking wine).

I hope you publish your cookbook soon. Really really soon!

Fondly,
Louisa

Sounds like a fun birthday & congrats on your/Vegan Mom's 10th anniversary. I like the colors you used for your son's b.d. cake. I'm assuming it was a vanilla sheet-type cake; looks very yummy!

sharon r,
I used to basic chocolate cupcake recipe from Vegan Cupcakes Take Over the World, and baked it in a 9" round pan. Just a simple single layer cake.

Not your best work? Come on, it looks amazing! I could never do anything that resembles...anything for that matter, except for maybe a squiggly line =P

The cake looks awesome, and happy birthday little man!

Happy anniversary, too. When do you celebrate it? Well, I hope you go someplace nice. And hopefully vegan, so you don't have to fuss with finding a vegan meal in a sea of steak and seafood.

The cake looks awesome. Too cute. I am in the middle of starting a Spongebob cake for Arthur's 2nd birthday. I am planning on using the Vegan Cupcakes Take over the World Vanilla cupcake recipe.

I think you did a great job on the Buzz Lightyear cake. Very cute! I bet your son adored it (and devoured it!).
